
Ingredients
For the Salad:
- 200 grams Datterini tomatoes (or any other tomatoes you have at hand)
- 1 ripe avocado
- 250 grams fresh mozzarella cheese
- Fresh basil leaves (a handful, torn or whole)
- 30 grams pine nuts (lightly toasted for added flavour)
For the Vanilla Dressing:
- 4 tablespoons extra virgin olive oil
- Salt (to taste)
- Pepper (to taste)
- 1 teaspoon pure vanilla extract
Method
1. Prepare the salad Ingredients:
- Rinse the Datterini tomatoes under cold water. Cut them in half and place them in a serving dish.
- Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Dice the avocado into bite-sized pieces and add it to the dish with the tomatoes.
- Tear the mozzarella by hand into small pieces or chop it and place it on top of the tomatoes and avocado.
2. Make the Vanilla Dressing:
In a small bowl, whisk together the olive oil, salt, pepper, and the magic ingredient our classic Madagascan Pure Vanilla Extract until well combined. Adjust the salt and pepper to taste.
3. Assemble the Salad:
- Drizzle the vanilla dressing over the salad ingredients in the dish. You can toss the salad or simply serve as it is. I prefer to simply drizzle the dressing on top.
- Sprinkle the toasted pine nuts and add the fresh basil leaves.
4. Serve:
Finish the salad with a final sprinkle of freshly ground pepper, if desired. Serve immediately as a refreshing appetizer or a light main course.

Tips
- Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes, stirring continuously until golden brown to enhance their flavours.
- This salad pairs beautifully with crusty bread or as a side dish for grilled meats or seafood
